This is a perfect meal for when you are short on time. It’s delicious, loaded with veggies, and even better as leftovers! Even my kids love it!
Ingredients:
- 1.5 pounds lean ground beef
- 1 yellow onion, diced
- 1 large bell pepper, diced
- 2 minced garlic cloves
- 1 Tbsp smoked paprika
- 1 tsp dried oregano
- 1 large head green cabbage, chopped thinly>
- 1 jar Rotel
- 2 Tbsp Apple Cider Vinegar
- Salt and pepper to taste
Directions:
- In a large skillet, brown your meat along with your diced onions. Drain any access fat.
- Add in bell pepper, garlic, oregano, and a pinch of salt and pepper to taste.
- Cook until veggies are tender.
- Stir in cabbage, rotel, and apple cider vinegar.
- Reduce heat, cover, and simmer until cabbage is soft (about 15 minutes).
- Once veggies are cooked to your liking, remove from heat and enjoy!
