Ground beef and cabbage in a skillet

This is a perfect meal for when you are short on time. It’s delicious, loaded with veggies, and even better as leftovers! Even my kids love it! 

 

Ingredients:
  • 1.5 pounds lean ground beef
  • 1 yellow onion, diced
  • 1 large bell pepper, diced
  • 2 minced garlic cloves
  • 1 Tbsp smoked paprika
  • 1 tsp dried oregano
  • 1 large head green cabbage, chopped thinly>
  • 1 jar Rotel
  • 2 Tbsp Apple Cider Vinegar
  • Salt and pepper to taste
Directions:
  1. In a large skillet, brown your meat along with your diced onions. Drain any access fat.
  2. Add in bell pepper, garlic, oregano, and a pinch of salt and pepper to taste.
  3. Cook until veggies are tender.
  4. Stir in cabbage, rotel, and apple cider vinegar.
  5. Reduce heat, cover, and simmer until cabbage is soft (about 15 minutes).
  6. Once veggies are cooked to your liking, remove from heat and enjoy!
